Men and Eating Disorders; Trauma and the Body as Enemy

EATING DISORDERS

Men and Eating Disorders; Trauma and the Body as Enemy

By Mark Isaac Thyss
Garden of Healing®

Little would you think, but men also suffer from eating disorders - it's not just a problem among women.

Men are following ten to twenty years behind women in terms of being exposed to body images that are difficult to achieve.

According to an article in the September 1995 issue of Psychiatric Times, about 7 million women across the country suffer from eating disorders including anorexia nervosa and bulimia nervosa. However, as many as 1 million men also struggle with eating disorders.

Males with eating disorders have been “relatively ignored, neglected (and) dismissed,” said Dr. Arnold Anderson, psychiatry professor at the University of Iowa College of Medicine, in the Psychiatric Times.

The American Journal of Psychiatry suggests two in every 100 males have an eating disorder.

Commenting on the magnitude of this problem, Dr. Anderson said, “Eating disorders are as common in men as in women, and perhaps more severe.”

Dr. John Morgan, one of Britain’s leading experts in eating disorders suggests that as many as one in five young men derive extreme distress from the shape and size of their bodies.

The experience of trauma often leads to the body being perceived as an enemy.

Eating disorders result in a person being both the weapon and the victim. Clearly, the man afflicted with an eating disorder is viewing the body as the enemy and is lost in a never-ending cycle wanting to self-punish through the control of his food intake.

We all try to somehow control or avoid pain, and in doing so, we think that life would then become manageable. For the person suffering from eating disorders, the need for control over food becomes primary. This in turn results in denying one’s own nutritional well-being.

The relationship with food becomes the focal point for survival. Restricting and/or binging behaviors gradually consume more and more internal resources.

Calling it “Manorexia” is treating the problem with typical Hollywood flair, and this is a mistake, because it’s a dead-serious disease.

There is little known because it is not typically seen as a disease among men. Men are too often diagnosed with depression, rather than with an eating disorder. Men also tend not to discuss their body concerns in the same way that women do.

Homosexual men are at an increased risk for developing an eating disorder. The International Journal of Eating Disorders reported both body dissatisfaction and eating disorders are considerably more prevalent among homosexual men in comparison to heterosexual men. In their study of homosexual men, 20 percent suffered from anorexia and 14 percent suffered from bulimia.

Some patients who experience little to no relief from an eating disorder describe their world as a constant battle with food and their body. The tension between the eating disorder voice and the inner self is all-consuming. Individuals in this place are characteristically in need of a higher level of treatment for their eating disorder.

Patients must gain freedom from the painful and repetitive struggles and life-interruption that accompanies eating disorders.

New research done by doctors at the University of Iowa and headed by psychiatrist Dr. Arnold Anderson shows that men with eating disorders had significantly lower bone density than women suffering with the same condition. Severe weight loss and a deficiency in essential nutrients, particularly calcium, can cause a serious decline in bone mineral density (BMD) leading to the brittle bone disease osteoporosis.

Anderson and his team assessed the BMD of 380 people (14% of whom were men) who had been admitted to the eating disorder clinic at the University of Iowa between 1991 and 1998. Three types of eating disorders were studied: anorexia nervosa, binge/purge anorexia nervosa, and bulimia nervosa.

While all patients with these disorders showed BMD deficiencies, the researchers found that men, particularly those suffering from the binge and purge bulimia, had markedly lower bone density. The researchers suspect the serious drop in BMD for men is related to the male hormone testosterone, which is predictably lower in men suffering from eating disorders.

Men who develop eating disorders can generally be divided into three groups. There are those where onset was preadolescent, those where the onset was adolescent or young adult and those where the onset was adult.

“As many as one in six cases of anorexia nervosa occur in males. Binge-eating disorder seems to occur almost equally between males and females, although males are not as likely to feel guilty or anxious after a binge as women are sure to do,” according to the Anorexia Nervosa and Related Eating Disorders, Inc.

Anorexia Nervosa and Related Eating Disorders:

http://www.anred.com/

Eating disorders in men may be a new occurrence, or may have been occurring since the creation of beauty standards. If we allow men to acknowledge their disease, eating disorders will lose their power.

Treatment for eating disorders is gravely essential. Viewing the body as the enemy with the pain and anguish that accompany this idea means getting insight, especially into any past trauma.

Friendly Bacteria bug a Leaky Gut to Heal

NUTRITION

Friendly Bacteria bug a Leaky Gut to Heal

By Mark Isaac Thyss
Garden of Healing®

Modern foods lack necessary beneficial bacteria also known as “friendly” bacteria. One of the greatest benefits obtained from good bacteria is healthy immunity.

Everything from food allergies to aspirin to stress can irritate the lining of your stomach. An irritated gut and lack of the friendly bacteria, and an out-of-control overgrowth of candida, are a prescription for leaky gut syndromes.

It’s likely that everyone gets a little leaky gut from time to time, but normally, a healthy body will repair itself and you’ll be good to go. People with underlying infections, like candida, or chronic illnesses, like HIV or Crohn’s disease, can end up with minor damage to the small intestine. This damage left unaddressed could produce a syndrome that becomes chronic.

The most common causes of damage to the the integrity of the intestinal mucosa are infectious agents (viral, bacterial and protozoan), ethanol, and non-steroidal anti-inflammatory drugs.

It was the sixteenth-century physician Paracelsus who believed the cause of all evil lies in the intestines. Many health problems originate in the intestines and digestive tract. When digestion is poor toxins are often the result and one of these toxins is acid.

What should become clear is the difference between what essentially irritates the gastrointestinal tract and what would be more soothing and ultimately healing for it.

What heals and what simply cannot...

The Digestive Process

The right foods protect against diseases, while the wrong ones may actually promote them.

Digestion is a complex process. Food you eat enters the esophagus where it travels through the digestive tract to the stomach. There it is further broken down by enzymes and hydrochloric acid. Food then moves into the small intestine which absorbs nutrients. Finally, after leaving the small intestine, the food moves through the large intestine (colon) and is eventually expelled as waste.

Digestion breaks food down so that various nutrients can be used by the cells of the body (converting these nutrients into energy).

With a leaky gut, the process of digestion is altered somewhat. Here is a possible theory of what may be going on.

A Leaky Gut and the Digestive Process

Normally food travels through the small intestine, where tiny molecules of fats, proteins, and starches get absorbed through the walls and into the bloodstream. The larger molecules, which include troublemakers like bacteria, toxins, and partially digested food, are left to progress to the large intestine and out of the body.

The theory is that people with leaky gut syndrome have tiny openings in the walls of their small intestines, and this is where the name Increased Intestinal Permeability comes from.

With these openings in the small intestine, the large molecules are allowed to leak into the bloodstream, where the immune system attacks them as foreign invaders. Food molecules that get into the blood this way can trigger food allergies; but any large molecules that leak out can cause inflammation, irritating the gut lining and exacerbating the problem.

Candida albicans is a yeast that normally resides in the body in the digestive tract, and many people suffer from an overgrowth of this micro-organism. Candida levels are kept in check by the immune system and beneficial probiotic bacteria in the body.

If probiotic bacteria are killed by antibiotics or if the immune system becomes weakened, Candida yeast may grow unchecked causing a variety of problems.

This condition (called Candidiasis) presents with a wide variety of symptoms which may vary greatly in each individual case.

Lactulose-Mannitol Challenge

Get a clinical test from a qualified physician called the lactulose/mannitol challenge in order to get an accurate diagnosis for Leaky Gut Syndrome.

This chronic inflammation is the suspected link between leaky gut syndrome and other conditions. The result can be autoimmune diseases such as fibromyalgia, chronic fatigue syndrome, and rheumatoid arthritis.

Leaky Gut Syndrome is also known as Increased Intestinal Permeability and/or Intestinal Hyperpermeability.

The Lactulose/Mannitol Challenge Test

If your doctor suspects you have a leaky gut, he/she will administer a very simple clinical test, the lactulose/mannitol challenge. Patients are first put on a fast and then ingest 5 grams each of mannitol and lactulose.

Mannitol, a monosaccharide (small molecule), is passively transported through the intestinal wall and is expected to be present in the blood; around 15% of the dose appears in the urine (range 5-25%). Lactulose on the other hand is a disaccharide (a larger molecule) and is not normally absorbed; less than 1% of the administered dose appears in the urine.

An abnormal result occurs when lactulose appears in significant amounts (over 3% is definitely positive), which means that the gut is allowing through bigger molecules than normal. In fact, it is the ratio of lactulose/mannitol which is reported.

Understanding the gastrointestinal tract’s bacterial population is key.

You can take steps to gradually improve digestion by restoring healthy bacteria to your gut.

With leaky gut syndrome, your gut’s ratio of good to bad bacteria gets out of whack. To help heal this syndrome, replenish the good bugs with a mixed probiotic supplement.

Probiotics are bacteria that are beneficial to a person’s health. They help protect the body against pathogenic bacteria and assist in recovery from an illness. Probiotics are dietary supplements containing beneficial bacteria or yeasts.

Treatments for Intestinal Hyperpermeability

Taking on leaky gut, your practitioner might prescribe a low-fiber diet to allow your intestines time to heal. You might also need supplements like digestive enzymes.

Also included might be: glutamine, acidophilus, omega-3 fatty acids, aloe vera juice and alpha-lipoic acid.

In addition to probiotic supplements, you might look at a few foods to accomplish the same goal.

And addressing the foods and food allergies that cause leaky gut syndrome is key.

Kimchi, miso, kefir and yogurt

The longest-lived peoples have always supported their health with fermented foods.

Kimchi, miso, kefir and yogurt are able to promote the growth of friendly intestinal bacteria.

Most of the time, Leaky Gut Syndromes will evade detection - make sure your doctor is specifically looking for them.

Dysfunctional Gut Fermentation - What to Add and to Avoid

An abnormal bacterial ratio can lead to dysfunctional gut fermentation having adverse effects on nutrient assimilation and production.

Avoid the habitual use of sugar, drinking sodas, and soothing emotional pain with sweets. To help prevent candida overgrowth, also avoid food additives and preservatives, alcohol, and caffeine.

In our modern times, the path to healing Leaky Gut Syndromes is to squarely focus on avoiding toxins and toxic environments.

Explore finding alternatives to taking prescription drugs on any long-term basis.

Reduce or eliminate alcohol, nicotine, allergic foods, and preservative-rich foods. Combat free radicals by taking antioxidants. Include in your diet the vitamins A, E, C, the mineral selenium, and the plant extract, Pycnogenol.

Eat more broccoli, cabbage and Brussels sprouts, which contain phyto-chemicals that stimulate Phase I and Phase II liver detoxification pathways.

Consider nourishing your gut with the likes of the minty herb peppermint (Mentha piperita), which is good for stomach aches, indigestion and gas. Research suggests that peppermint relaxes the gastrointestinal tissue.

The presence of Candida overgrowth, especially within an immune-compromised individual, can significantly contribute to leaky gut and related conditions. To help bring candida back down to healthy levels, do add these foods to your diet: green algae, live yogurt cultures, non-glutenous grains, nuts and seeds, protein and vegetables.

It’s the difference between what heals and what simply cannot.

Here’s an herb that heals: Ginger root.

Ginger root (Zingiber officinale) has analgesic and anti-inflammatory properties that may alleviate digestive cramps and mild pain from fibromyalgia.

You can prepare a tea from 1 teaspoon chopped fresh root simmered in a cup of water for about 10 minutes.

You might have better luck in finding solutions to leaky gut in the various branches of alternative medicine. Natural doctors are more apt to understand that damage to the bowel lining is caused by antibiotics, toxins, poor diet, parasites or infection.

Leaky gut syndrome can bring on a host of unwanted symptoms, including gas, bloating, stomach cramps, and diarrhea. Make sure to obtain a clinical test from a qualified physician called the lactulose/mannitol challenge in order to get an accurate diagnosis.

It might sound odd that a little beneficial bacteria (probiotics) can build healthy levels of intestinal flora. This helps your gut absorb minerals, maintain bowel regularity and stave off diarrhea. Look for high-quality products that contain living organisms and check to make sure if you need to refrigerate them.

Cinnamon stalks High Blood Sugar

FOODS THAT HEAL

Cinnamon stalks High Blood Sugar

By Mark Isaac Thyss
Garden of Healing®

If you are a person with diabetes, life can be a challenge keeping blood sugar levels close to normal. Who would consider cinnamon in their efforts to manage diabetes? You should.

Cinnamon is a warming, stimulating, pleasant-tasting herb with many uses, and for diabetics, it helps to reduce blood sugar, so make this spice a regular part of your diet.

Diabetes
People with diabetes have high blood sugar levels because their cells don’t respond to insulin, the hormone that signals when glucose needs to be stored. Over time, the extra glucose in the blood damages tissues. Cinnamon can reduce the amount of insulin necessary for glucose metabolism.

History
Better known in the Western world as a culinary spice, cinnamon’s history as a medicinal herb goes back centuries in India and in other parts of Asia.

Cinnamon (Cinnamomum cassia) is sweet and possesses warming qualities. It’s unique healing abilities come from the essential oils found in its bark. These oils contain active components called cinnamaldehyde, cinnamyl acetate, and cinnamyl alcohol, plus a wide range of other volatile substances.

Cinnamon also has a germicidal effect; almost all highly aromatic herbs display some ability to reduce fungal infections and bacteria levels, and cinnamon in mouthwashes and gargles can help treat just these types of infections in the mouth.

More than an everyday spice
You can add cinnamon, in ground or stick form, to your coffee, tea, orange juice, or cereal and get enough of the water-soluble proanthocyanidins that effect blood glucose, LDL cholesterol, and triglycerides. There are also commercially available cinnamon dietary supplements with whole cinnamon or water soluble cinnamon extract capsules.

Cinnamon and Proanthocyanidins
Cinnamon is an extremely rich source of proanthocyanidins and it’s too bad that it cannot be consumed daily in large quantities.

Proanthocyanidins are large complex compounds found in many foods. Specifically, proanthocyanidins are antioxidants that quench free radicals and potentiate other antioxidants like vitamins C and E.

Cinnamon contains these (proanthocyanidins) active ingredients and they sensitize cells to insulin. As these chemicals enter cells, they activate insulin receptors and enable the cells to manufacture energy from glucose.

Studies with cranberries and cinnamon, both of which contain uniquely linked proanthocyanidins, support a role for bacterial anti-adhesion and improved glucose metabolism in type 2 diabetics, respectively.

Results from a variety of experiments indicate proanthocyanidins may also modulate several reactions involved in cancer processes.

Studies have identified cinnamon’s water soluble components, these proanthocyanidins, as the active ingredients affecting blood glucose, LDL cholesterol, and triglyceride levels.

When you use ground cinnamon you are getting both the water-soluble and the fat-soluble components. You also get a health bonus of one gram of dietary fiber in each teaspoon of cinnamon.

The proanthocyanidin content (mg per 100 g) of cinnamon is 8108. So, do your best to sprinkle a goodly amount on your morning oatmeal, and find other ways to bring this aromatic herb into your daily routine.

Diabetes and Fiber
Eating a high-fiber, low-sugar diet and exercising are important ways to keep blood glucose levels normal, and you should employ these strategies, because they work.

Consider adding 1/8 to 1/4 teaspoon of cinnamon per day to your diet, because doing so will have a beneficial effect on keeping blood sugar levels in check.

Most people associate the fragrant, sweet and warm taste of cinnamon with its use during the winter months, but cinnamon has a long history both as a spice and as a medicine.

In Chinese medical philosophy, pain, cramps, and congestion are considered blocked energy.

Cinnamon is thought to move Qi, or vital energy, when it is “stuck” in the abdomen. Cinnamon circulates Qi energy to the rest of the body. You might want to use small amounts of cinnamon tea to relieve gas in the stomach.

Cinnamon is an excellent source of manganese and a very good source of dietary fiber, calcium and iron. It warms and stimulates the digestive system, is useful in weak digestion and is helpful for nausea and vomiting. Medicinally speaking, 1/2 to 3/4 teaspoon (2-4 grams) of the powder per day is the usual amount to be taken.

Precautions and Warnings
Cinnamon is a safe and inexpensive addition to a program designed to help manage high blood sugar from diabetes.

Cinnamon bark is generally safe to use in medicinal amounts, but allergic skin rashes or mucous membrane reactions are possible. Avoid this herb if you have a high fever, are red and sweating, or have irritable bowel syndrome. If you have multiple allergies or sensitivities, use cinnamon cautiously.

Caution during Pregnancy
Do not use during pregnancy due to cinnamon’s emmenagogic effect. You may use cinnamon in baking, but avoid more than a cup of cinnamon tea each day.

Natural Care; Modern Medicine offers Flawed Approach

NATURAL HEALTH

Natural Care; Modern Medicine offers Flawed Approach

By Arlie Ian Maylin

Have you ever wondered why certain diseases seem never fully treatable? Ever asked yourself why so many side effects from medications have literally created cottage industries around themselves?

Was the human body really designed to handle the stress of never-ending health issues?

It seems we just keep patching up our health problems with temporary fixes, instead of eliciting a full or complete healing. Why?

Many blessings and miracles have sprung from Western Medicine, and as a result, the average person now aims to live much longer than in times past.

Rapid technological advances have their share of disadvantages. As technology progresses, new and unusual health problems have arisen.

For example, after the industrial revolution, processed foods became increasingly popular due to their marketability. These new foods were convenient to produce on a mass scale. And not surprisingly, the human body responded to these changes in diet the best it could. There were unforeseen reactions, like anything from frequent constipation, to diseases of the colon, and even to Crohn's disease.

There have been studies showing a sharp increase in appendicitis among early 19th century African slaves after adapting to a diet of processed foods. Change can be good, but not in all cases, especially when it comes to the balance needed for digestive health.

As the human body began suffering from new digestive problems attributed to these dietary changes, modern medicine came to the rescue by attempting to cure the symptoms, but without truly addressing the cause of any deeper biological in-congruence.

For example, with the advent of modern surgical and anesthetic techniques, many people in First World nations divorced themselves from older methods of treatment.

How often do you consciously practice the highest form of health care - Prevention?

When it comes to digestive health, prevention is key.

Pills and surgery have become all too common as preferred and recommended treatments by most health authorities. People seem disinterested in the connection between the long term consequences of the very quick fixes they seek.

How about addressing the deeper issues causing disease in the first place?

The most popular quick fixes are chemical-based medications.

Because of the effect that chemistry can have on the body, the most obvious results from drugs can only be seen on the surface. What could be hiding is a darker reality that can manifest itself in the form of random side-effects. In more extreme cases, these side effects can damage your immune system or cause other disorders to develop.

Most people opt for surgery not knowing there might be anything better out there, like a more natural approach with gradual healing in mind?

There’s an old Chinese adage … “all health is digestive health” and this is so true.

A better way to prevent digestive problems is by relying on a more natural lifestyle, and by attempting to follow the diet of the hunter/gatherer or a Paleolithic diet.

While becoming a hunter/gatherer is largely impractical, there are many other things you can eat and natural approaches you can take to improve digestive health.

The Paleo diet is a nutritional concept based on the ancient diet of wild plants and animals that various human species habitually consumed during the Paleolithic period.

The foods I am talking about are commonly available modern ones like lean meat, fish, vegetables, fruit, roots, and nuts.

Based on the idea that human genetics have scarcely changed since the dawn of agriculture, the Paleolithic diet assumes that modern humans are more genetically adapted to the diet of their Paleolithic ancestors.

Building upon the principles of evolutionary medicine, the paleo diet would therefore seem the ideal for human health and well-being because it most resembles one's ancestral diet.

Some believe that people who subsist on a traditional diet similar to those of Paleolithic hunter-gatherers are largely free of diseases, and that such diets produce good health.

Are there any Paleo dieters out there who can verify this?

My point here is that such a diet would increase your chances of producing a healthy digestive tract.

Cancer treatments also have a downside. It has been scientifically documented that many cases of terminal illness are a result of the cancer treatment than from the cancer itself.

We have to ask ourselves if our “treatments” are literally overkill. What about more gentle approaches that get to the root of the problem?

As Economics and the Media in the First World push the masses to instant gratification, your desire is to see quick fixes reflected in health care. Don't ignore or downplay the efficacy of traditional methods of prevention. The key is to recognize your need for a quick fix and to not place your health at risk by running after whatever is considered “conventional”.

Think!

The Media and the advertising industries are funded by capital-rich pharmaceutical corporations which might or might not have your best interests in mind.

This is the unfortunate side of medicine where some technological advances are led by oligarchs, rather than by pure common sense - and for the common good.

Be sure to question any and all methods to heal any health condition.

A Battery that runs on Sugar

TECH GADGETS

Bio Nutrition Batteries

By Mark Isaac Thyss
Garden of Healing®

Sony’s bio cell, unveiled in mid-2007, uses glucose-digesting enzymes.

There soon will be other things that run on sugar besides you. Here we’re talking about fuel cells - like a new battery prototype from Sony.

How’s that for eco-friendly: a battery that runs on sugar.

This power set, appropriately shaped like sugar cubes, was one of the seven winners of Time Magazine’s “Best Innovation of the Year” lineup in the Environment category.

The article in Time says that “Sony’s bio cell, unveiled in mid-2007, uses glucose-digesting enzymes to extract electrons from any sugary solution (as with other batteries, the electrons flow around the circuit to generate electricity). Connect four of the 50-milliwatt cells, and you’ve got enough juice to keep your MP3 player humming.”

Some of the other green contest winners were just as unusual, including Xerox’s erasable paper, an earthquake-proof bacterium, bricks made of mercury-laced ash, and other weird but useful inventions.

Prostate: Protect Yourself with Lycopene and Green Tea

MEN’S HEALTH

Prostate CancerSeek the protection of Lycopene and Green Tea

By Mark Isaac Thyss
Garden of Healing®

Prostate cancer is the most common cancer found in men in developed countries. It is the most frequent type of cancer in American men. In 2002, more than 30,000 men died of the disease. The risk of prostate cancer increases rapidly after age 50, and the tumor is especially prevalent in Western populations.

Because the tumor is often relatively slow growing, most men die “with prostate cancer” as opposed to “of prostate cancer”. Even so, this form of cancer can cause significant suffering because of such symptoms as urinary retention and bone pain.

Due to the large impact of prostate cancer, there is great interest in new methods of prevention and treatment. For example, men can lower the risk of prostate cancer by drinking green tea and eating foods containing high amounts of lycopene.

No studies have assessed the appropriate age to begin lycopene supplement therapy. Such a study would be difficult to conduct; most lycopene consumption originates from the diet, a variable nearly impossible to control over long periods. Clearly, getting protection from the foods you eat is ideal.

The latest dietary guidelines call for five to thirteen servings of fruits and vegetables a day, depending on one’s caloric intake. The 5-a-Day message is now quietly changing to 5 to 9 a day, and this is supported in part by the National Cancer Institute.

In the case of heart disease, increasing fruit and vegetable intake by as little as one serving per day can have a real impact.

You can find lycopene in supplement form, but first start by eating lycopene-rich foods such as tomatoes, grapefruit and watermelon.

To investigate the possible joint effect of lycopene and green tea on prostate cancer risk, a case-control study was conducted in Hangzhou, China, with 130 prostate cancer patients and 274 hospital controls. Prostate cancer risk was reduced with increased consumption of green tea, and together, lycopene and green tea have an even stronger preventive effect than either component taken separately. Therefore, the protective effect from tea and lycopene consumption was synergistic.

Many studies suggests that habitual tea drinking can reduce your risk of many diseases, and as green tea is so simple to use, this is a good place to start.

So much information is available about the right things to do and foods to eat, but the central question remains, will you do any of them?

Let simplicity serve you; make one change until it has become part of your new regular routine. How about green tea?

Even though green tea comes from the same tea plant as black teas, they are not the same.

Traditional black tea has been processed in a manner that removes the ingredients which work to reduce prostate cancer.

It is well known that Asian men have a low incidence of prostate cancer, and noteworthy, is that green tea has always been a part of their diet. Green tea is nothing new to the American diet; the new thing is making a change, any change.

It might be difficult to study, purchase and then integrate a number of new prostate-cancer specific foods into your diet, but making a cup of green tea is easy and it can go a long, long way to improving your health.

Selenium Trade-off - Diabetes?

SUPPLEMENTATION

Selenium Dietary Supplements may raise Risk of Diabetes

By Mark Isaac Thyss
Garden of Healing®

Are you one of the many people taking selenium supplements to stay healthy? Recent research reported by the Annals of Internal Medicine paints a different story.

While some research suggests that selenium supplements can improve the way the body handles sugar and might prevent some of the complications of diabetes, other data suggest that supplementation with selenium has no effect on diabetes or health.

People who took a 200-micro gram daily dose of the mineral for 7 years had a 50 percent higher risk of developing type 2 diabetes compared with placebo, the study found.

Selenium is a mineral that is required in very low doses for the body to function normally.

Selenium is an antioxidant. Antioxidants prevent damage to cells caused by oxygen. Selenium is involved in many biological functions, including protection against oxidative stress, immune function, and thyroid function.

Although most people get enough selenium in their diet, selenium is included in many multivitamins and is sold as a supplement itself.

Before it was found to be an essential nutrient, selenium was considered highly toxic to animals and humans. Now, more than 1% of the U.S. population take selenium supplements.

Additionally, more than 35% take multivitamin and multimineral supplements that often contain selenium.

The Tolerable Upper Intake Level (UL) for selenium is set at 400 µg/d to avoid visible symptoms of selenium toxicity in sensitive persons. In the U.S., the recommended dietary allowance for adults is a minimum of 55 micrograms. Most multivitamins include 33 to 200 micrograms of selenium.

In short, this research suggests that taking selenium supplements on top of an adequate dietary intake may increase your risk for diabetes.

This information is not a substitute for advice from your own medical provider. If you have questions about selenium, and/or need advice about your health, contact your physician.

Homeopathy; the Trigger of Choice

ALTERNATIVE MEDICINE

Homeopathic Remedies Trigger the Body to Heal Itself

By Mark Isaac Thyss, Editor
Garden of Healing®

Homeopathic Medicine is both inexpensive and very effective.

Homeopathy is not a catch-all phrase for all alternative and complementary medical fields. It refers specifically to a branch of medicine founded by Samuel Hahnemann at the end of the eighteenth century.

Law of SimilarsHomeopathic medicine is based on the Law of Similars, founded on the principle that likes will cure likes.

Rather than suppressing symptoms, for example, from food poisoning, homeopathy triggers the body into healing itself.

The average person might not be able to follow the logic behind this type of natural medicine. While the exact mechanism behind how it works is a matter of debate in some circles, homeopathy has successfully been treating patients for over 200 years.

Homeopathic remedies are created from thousands of natural substances, greatly diluted, and which in larger amounts would cause the same symptoms one is trying to cure.

Typical homeopathic remedies come in the form of little sugar pills that dissolve easily under the tongue or can be dissolved in small amounts of water, then given orally. The actual pills or pellets, come in small vials.

When shopping for homeopathic formulas, look for remedies that most closely describe your specific symptoms. For example, for food poisoning, look for:

Arsenicum album
Signs include diarrhea accompanied by anxiety. You may also feel restless or anxious and thirsty for cold drinks.

Urtica urens
This is the remedy of choice for shellfish poisoning, particularly if accompanied by hives that itch.

Veratrum album
This remedy may help severe vomiting (projectile vomiting) along with diarrhea, and/or if you are feeling faint from vomiting.

Revolution in medical thought and practice

Homeopathy as a system of medicine has gone through several phases in its development.
Samuel Hahnemann rejected the allopathic attempt to find the cause of disease through dissection, chemical analysis, and endless theories. He ridiculed the allopathic battle cry, tolle causem (find the cause) and asserted that one could only know disease through the full individual symptoms of each sick person, the totality of symptoms. These were the language of the inner disturbance.

Classical and Constitutional

There are two major branches of homeopathy: Classical and Constitutional.

In the application of constitutional homeopathy, the selected remedy may not address the chief complaint but will fit the overall picture or constitution of the patient.

In constitutional homeopathy, the emphasis is placed upon the individual, including the underlying psychological issues, motives, personality and physical symptoms. Remedy selection is based upon the most distinct characteristics of the client matching the characteristics of the remedy which will enhance overall health.

Homeopathy is considered an effective natural method to repel imbalance out of the body and allow it to heal. The wonder of homeopathic medicine is in its safety, in the very small amount of medicine needed, and in the speed of healing. It a great choice for addressing the ills of small children who embrace its use eagerly.

Vitamin A and Beta Carotene

NUTRITIONAL SUPPLEMENTS

Garden of Healing® Supplement Advisor: Vitamin A and Beta Carotene

QUESTION:

Dear Garden of Healing® Supplement Advisor:

What is the difference between Vitamin A and Beta Carotene?

ANSWER:

Vitamin AVitamin A (retinol) is an essential human nutrient and fat-soluble vitamin necessary for new cell growth, healthy tissue, and vision in dim light.

Vitamin A is found naturally in many foods:

Sweet potatoes, carrots, collard greens, kale, pumpkin, spinach, sweet peppers, winter squash, apricots, cantaloupe melon, mango, liver (beef, pork, chicken, turkey, fish), eggs, and broccoli.

_________

Retinol, the animal form of Vitamin A, is a yellow fat-soluble, antioxidant vitamin with importance in vision and bone growth.

Vitamin A is stored by the body and can be toxic in extremely high doses taken over a long period of time.

Hypervitaminosis A refers to the effects of excessive vitamin A (specifically retinoid) intake. Signs of acute toxicity include nausea and vomiting, headache, dizziness, blurred vision, and loss of muscular coordination.

Beta CaroteneBeta Carotene is not a vitamin, but the body converts it into Vitamin A as needed. Beta Carotene, unlike Vitamin A, is not toxic in high doses.

Beta Carotene, sometimes referred to as Provitamin A, is know to be an efficient anti-oxidant.
Carotene is responsible for the orange color of carrots and many other fruits and vegetables.

The following foods are particularly rich in carotenes:

Sweet potatoes, carrots, kale, spinach, cantaloupe melon, turnip greens, winter squash, collard greens, cilantro, fresh thyme, Romaine lettuce, goji berries, Ivy gourd and Cassava.

Absorption from these foods is enhanced if eaten with fats, as carotenes are fat soluble, and if the food is cooked for a few minutes until the plant cell wall splits and the color is released into any liquid.

Thyme; Ancient, Popular and Modern

PLANT KINGDOM

Thyme
Botanical Name: Thymus vulgaris

By Mark Isaac Thyss
Garden of Healing®

The Ancient Romans and Greeks used ‘thymos’ in many interesting ways.

The Roman natural historian, Pliny, noted the medicinal use of Thymus vulgaris to treat headaches and intestinal complaints.

Growing wild on the rocky slopes near the Mediterranean Sea, Thyme with its highly aromatic leaves, is frequently used fresh or dried as a seasoning in a variety of culinary applications including soups, stews, sauces, meat and fish dishes.

Garden (or common) thyme is a woody-based perennial which is primarily grown as a culinary herb in herb gardens.

Thyme grows as a wiry shrub with evergreen leaves and small lavender flowers that are very attractive to bees. Whorls of tiny, tubular flowers appear on the stem ends in late spring to early summer.

Thyme is an important spice of European cuisines, especially in South Europe.

This classic herb of French cuisine is tied up into bundles together with other fresh herbs making it an essential element in bouquet garni. It has been used since antiquity, and the botanical name derives from the ancient Greek thymos.

Ancient Greeks and Romans burned thyme as sweet incense, and Roman soldiers bathed in thyme water to gain energy. Though apparently not in general use as a culinary herb among these ancients, it was employed by the Romans to give an aromatic flavor to cheese (and also to liqueurs).

Medicinally, Thyme oil has antiseptic properties and is still used as an expectorant. The Thyme flowers and leaves have been used for flu, cough, and other breathing problems such as bronchospasm and bronchitis.

A Speak of Nature, the ND

THE NATURAL DOCTOR

Consider the Naturopath (ND)

By Mark Isaac Thyss
Garden of Healing®

If you are looking for a new doctor for your family, consider the ND.

Just like an MD, the Naturopath will diagnose and treat health problems, draw blood, order lab tests, perform physical exams, and even prescribe some drugs. They’re also trained in clinical psychology; they act as teacher and guide, to help you commit to a healthy and active lifestyle.

A doctor of Naturopathy uses natural therapies to keep you healthy, tending to treat minor medical conditions. But ND’s go further.

Did you know, Naturopathic Doctors are primary health care professionals?

They have rigorous training that includes nutrition, botanical medicine, traditional Chinese medicine, homeopathy, and acupuncture. They prescribe herbs, vitamins, and other nutritional supplements. Their goals are to prevent illness, treat the whole person, and help the body heal itself via natural means.

Naturopathic medicine is a distinct and comprehensive system of primary health care practiced by a naturopathic doctor for the diagnosis, treatment, and prevention of human health conditions, injuries, and disease.

Naturopaths help you establish a healthy lifestyle, to do all the right things for your health.

In 13 states, Puerto Rico, the US Virgin Islands, and five Canadian provinces, ND’s are licensed to diagnose patients, order lab tests, and write some prescriptions for supplements. ND’s simply offer guidance in other states.

Look for a naturopathic doctor who has graduated from an accredited four-year, graduate-level, naturopathic medical program.

In California, Senate Bill (SB) 907 (Statutes of 2003) established the Bureau of Naturopathic Medicine within the Department of Consumer Affairs. The Bureau administers the Naturopathic Doctors Act. This law specifies various standards for the licensure and regulation of naturopathic medicine that the Bureau enforces.

Naturopathy blends centuries-old natural remedies with current medical practices, emphasizing prevention and self-care. While Western medicine tends to rely on symptomatic treatment, naturopathy seeks to find the underlying cause of a patient’s illness, supporting and promoting the body’s natural healing process.

Mushroom Science® Agaricus Blazei Extract

PRODUCT REVIEW

Agaricus Blazei Medicinal Mushroom Extract by Mushroom Science®

By Mark Isaac Thyss
Garden of Healing®

Gene-altered corn, unlabeled ingredients in food, and the release of cloned meat and milk into the food supply, not to mention killer jungle viruses arriving from the Rain forest; what’s a consumer to do?

Medicinal mushrooms to modulate your immune system is welcome news, and here’s one we love, Agaricus Blazei by Mushroom Science®. For an immune-stimulating boost, learn what this mushroom can do for you.

Agaricus Blazei is a medicinal mushroom that contains a special class of polysaccharides known as beta glucans. Studies show beta glucans stimulate activity of natural killer (NK) cells, which are an important part of the immune system.

The active constituents of Mushroom Science® Agaricus Blazei are the Polysaccharides (1-6 linked proteoglycans extracted from the cell walls). We like this Mushroom Science® product because it’s considered the most potent extract.

There are different varieties of agaricus mushroom, and Agaricus Blazei is one of the most common.

Beta glucan is a naturally-derived polysaccharide which has been studied for its anti-tumor and immune stimulating properties. The carbohydrate polymers known as beta-1,3-d-glucans exert potent effects on the immune system - stimulating anti-tumor and antimicrobial activity, for example, by binding to receptors on macrophages and other white blood cells and activating them.

Agaricus blazei specifically helps in production of interferon and interleukin, which are instrumental in fighting off cancer cell metastasis, especially cancer of the uterus. It also reduces blood glucose, blood pressure, cholesterol levels, and the effects of arteriosclerosis.

Agaricus Blazei mushrooms are thought to owe their beneficial effects to their beta-glucans, a group of immune-boosting agents also found in shiitake, maitake, and reishi mushrooms, as well as in yeast.

Native to Brazil, Agaricus Blazei mushrooms are now also cultivated in Japan, Korea, and the United States.

The mushroom’s effect on the immune system has been verified by clinical trials, which have shown an increase in the number of white blood cells, a rise in the activity of natural killer (NK) cells, and an increase in production of tumor necrosis factor-alpha.

Researchers in Korea and Japan have declared it an effective treatment for supporting the immune systems of cancer patients undergoing chemotherapy.

Agaricus Blazei, Royal Sun Agaricus, Nature’s Most Powerful Beta 1-6 Glucan is a Dehydrated Hot Water Extract, 45% beta 1-6 glucan (polysaccharide).

The Agaricus blazei in this product is extracted with the preferred hot water/alcohol method to increase its digestibility and enhance bio availability of the polysaccharides.

_________

Medicinal mushroom extracts are very simple to take. They come in capsule form and the suggested use of this particular product is 1-3 capsules twice daily or more as recommended by your health care professional. It is best to take this supplement on an empty stomach.

Saffron used to treat Mild Depression

NIBBLES

Saffron for Depression

By Mark Isaac Thyss
Garden of Healing®

The color of Buddhist monks’ robes and the artist Christo’s “The Gates,” saffron is also the name for the spice derived from the dried stigmas of the crocus flower (Crocus sativus).

Native to India and the Near and Middle East, pure saffron is highly precious: one thousand flowers yield just a few grams.

The higher the altitude in which it is grown, the more precious the carotenoid-rich spice is considered. For millennia, the spice has been used to color and flavor foods and treat a variety of ailments.

Uses:
Homeopaths sometimes prescribe saffron to stop bleeding. In other medical traditions — such as Chinese and Ayurveda — it’s used to soothe the joints, aid digestion, increase appetite, treat depression, improve reproductive health in women and detoxify the blood.

Dose:
Usually, up to a few dozen milligrams a day. Saffron is sold as a spice, as a supplement in capsule form and as an ingredient in herbal formulas for digestion and detoxification.

Precautions:
Large doses could increase the risk of miscarriage. Overdoses can cause jaundice, dizziness, vomiting, cramps, bleeding and even death.

Research:
In test tube and animal studies, saffron has demonstrated cancer-preventing properties; in animal studies, the spice has shown the ability to improve learning and memory. In a recent preliminary clinical trial, a small daily dose of saffron (30 milligrams) showed promise in treating depression that is not severe. Few large-scale human studies have examined saffron’s effectiveness in treating other conditions.

The Buzz on Apitherapy

NATURE MADE

The Buzz on Apitherapy

By Mark Isaac Thyss
Garden of Healing®

You’d have to get as busy as a bee in order to taste all the available natural therapies out there.

This one’s appealing: apitherapy, the science of honey, so-to-speak.

Could apitherapy be the perfect holistic treatment? Take a closer look.

Apitherapy is the use of bee products to promote health. Products include raw honey, royal jelly, pollen, propolis, bee wax and bee venom.

Raw honey, nutrition - and bee venom?

Aside from cooking, honey has other more unfamiliar uses; it’s an anti-bacterial and can be used for dressing wounds and burns to keep them sterile and promote healing. Nice, but most people would probably rather eat it.

Honey is made by bees from flower nectar; it contains trace amounts of many vitamins and minerals.

In terms of your health, honey’s claims seem to be proving true. Honey has significant anti-microbial properties, and is a potent anti-oxidant. Choose the darker varieties, like buckwheat honey.

Apitherapy is actually a branch of alternative medicine. It is used by apitherapists to treat a wide range of medical conditions ranging from arthritis and chronic pain to serious medical conditions like cancer and stroke.

Honey is good for you - people have been consuming it since antiquity. Although there is scant scientific evidence to support health claims, the way we see it, how could you lose with apitherapy? No matter what you choose to do with honey therapeutically, you could always just eat the stuff.

Leave the venom for the apitherapist!

Kosher and Halal Multivitamins

NUTRITIONAL SUPPLEMENTS

Kosher and Halal Multivitamins for Pregnant Women

By Mark Isaac Thyss
Garden of Healing®

Canadian firm receives Kosher and Halal certification for prenatal multivitamins.

Duchesnay, a Québec, Canada firm, is the first and only pharmaceutical company in Canada to receive Kosher certification from the Kashruth Council of Canada (COR) and Halal certification from the Islamic Society of North America (ISNA) for its prescription prenatal multivitamins PregVit folic 5 and PregVit.

With this news, Jewish and Muslim women now have access to a family of prenatal vitamin and mineral supplements that comply with their religious beliefs and related food standards. Jewish and Muslim populations in Canada are approximately 350,000 and 1 million respectively.

Company spokesperson Christine Walter explained how the “very complex process” to produce PregVit folic 5 and PregVit took more than one year due to comply with standards. Every one of the two products’ ingredients had to reach exacting standards of food set by both religions.

To be certified Kosher and Halal, the 27 active and inactive ingredients of the formulas had to comply with the requirements of the Jewish and Muslim religious laws pertaining to food.

The ingredients contained in PregVit folic 5 and PregVit do not contain animal by-products from pork, bovine or chicken.

Manufacturing, packaging and handling processes meet certification standards, and the PregVit folic 5 and PregVit manufacturing site is subject to periodic inspections from the certification agencies.

In addition, to meet the needs of thousands of women with celiac disease or with lactose intolerance, PregVit folic 5 and PregVit do not contain gliadin-gluten, lactose or tartrazine.

The Omron Pocket Pedometer; model HJ-720ITC

PRODUCT REVIEW

Pocket Pedometer, model HJ-720ITC with PC software by Omron

By Mark Isaac Thyss
Garden of Healing®

The Omron Pocket Pedometer; model HJ-720ITC, is a great pedometer, and I highly recommended getting one.

It is the most technologically advanced pedometer offered by Omron - doing it’s job well and accurately. This pedometer counts your steps whether it is clipped on, in your pocket or in a purse.

I like the software (Omron Health Management Software); a couple of clicks and your data is automatically uploaded. It shows your results on a daily, weekly, monthly, and annual basis. Omron is the only company I have seen that provides you with this type of software.

The device manual could be improved but overall, it’s not hard to figure things out. Simply connect the pedometer with its USB connection to your PC to begin tracking your health today.

The Model HJ-720ITC can count steps, aerobic steps and minutes, calories, or distance, and has an increased memory storage capacity. The auto-reset to zero at midnight helps to keep you honest.

The unit is compact and comfortably fits in your pocket. It does not feel bulky either (you can wear it with a clip too, or hang it from a cord off a belt).

It seems to accurately count steps; when making the same walk a second time, it calculated the distance exactly on target. This is an accurate pedometer in terms of counting steps and estimating distance.

I also found the software easy to use. You simply attach the pedometer to your computer (my PC with XP) and then download the data. As bonus, the software also interfaces with some of Omron’s blood pressure units.

You pay a bit extra for this pedometer with its many features, including the software, but it’s worth it. You can save a few dollars by not getting the model with the software, but being able to easily track progress is one of the best things about this pedometer.

I highly recommended getting The Omron Pocket Pedometer, HJ-720ITC.

Roll with the Cranberry

THE ANATOMY OF NOURISHMENT

The Cranberry

By Mark Isaac Thyss
Garden of Healing®

Roll with the cranberry; you cannot go wrong.

The cranberry is a perky little berry, only in season between Thanksgiving and Christmas. The fresh fruit is generally available from September to December. But, not to worry; it can be purchased frozen and kept for up to 10 months in your freezer. This is welcome relief if you adore this bright red snappy berry.

Americans eat 400 million pounds of cranberries a year with 20 percent of that number being eaten on Thanksgiving Day.

The cranberry is an integral part of American cooking, and is harvested throughout the Fall.

The cranberry is a native American Indian fruit. The Pilgrims learned about cranberries from these Native Americans, who recognized their natural preservative power (benzoic acid), and often mixed them into pemmican (dried meat mixture) to extend its shelf life.

Cranberries are too tart to eat raw, so they are often married with other fruits, such as apples and pears, and with nuts and grains. They are available in a wide variety of forms including fresh fruit, juice, sauce, and dried. Juices and sauce are available year-round at your grocery retailer.

Most people eat cranberries because they are delicious, but they also have a reputation for warding off urinary-tract infections. Studies have found promising results for cancer prevention.

Cranberry juice is recommended for urinary tract infections. In 1998, researchers at Rutgers found that cranberry juice prevents E. coli bacteria from sticking to the cells of the urinary tract. Cranberry causes the bacteria to get flushed out of the body via the urine.

Scientific research is revealing how healthful cranberries can be. Packed with nutrients like antioxidants and other natural compounds, cranberries are a great choice for the health-conscious consumer.

Cranberries contain high amounts of vitamins, minerals, organic acids and various other phytonutrients.

Cranberries are a good source of vitamin A, C, B complex, Folic Acid and Fiber. Also included are the minerals Calcium, Iron, Phosphorus, Potassium, Sodium and Sulfur.

There is more to the cranberry than just vitamins.

Cranberries contain plant pigments called bioflavanoids, which help repair damaged molecules formed when the body uses up oxygen. They also contain hippuric acid, which has antibacterial effects on the body, as well as natural antibiotic ingredients.

In 1996 laboratory studies conducted by University of Illinois scientists, and published in Planta Medica, demonstrated the potential anti-carcinogenic properties of cranberries.

The majority of physicians and other health professionals believe there is a clear association between a diet high in fruits and vegetables and a low risk of chronic disease.

Phytonutrients (naturally derived plant compounds), particularly antioxidants, are increasingly being shown to help optimize human health.

Cranberries contain proanthocyanidins (PACs) that can prevent the adhesion of certain of bacteria, including E. coli, to the urinary tract wall. The anti-adhesion properties of cranberry may also inhibit the bacteria associated with gum disease and stomach ulcers.

Recent scientific research shows that cranberries and cranberry products contain significant amounts of antioxidants and other phytonutrients that may help protect against heart disease, cancer and other diseases.

Cranberries also contain a potent vasodilator which opens up bronchial tubes. And you can count on cranberries for a good source of Vitamin C to help enhance immunity and aid in calcium absorption.

Cranberries have so many medicinal benefits and uses, so eat up, and feel free to do so all year round.

Diet of the Past

PERSONAL DIETS

Prehistoric Nutrition
You are what your ancestors ate

By Mark Isaac Thyss
Garden of Healing®

How many people consider their dietary past?

You are what your ancestors ate. This is Paleolithic Nutrition talking.

Millions of years of evolution have shaped your needs for nutrients. You and your early ancestors share the same genes. Feed them well, and they do their job.

How out of sync is our modern diet with your genetic prehistoric requirements? Well, the less you eat like your ancestors, the more you’ll invite coronary heart disease, cancer, diabetes, and many of the other “diseases of civilization.”

On your next trip to the grocery store, consider a diet of the past. Go back to the drawing board. Or, back to the cave wall. Think like a hunter-gatherer.

Over billions of years, amino acids, lipids, vitamins, and minerals formed and helped construct the countless forms of life. In turn, these life forms became dependent on essentially the same group of nutrients.

99 percent of our genetic heritage dates from before our biological ancestors evolved into Homo sapiens about 40,000 years ago, and 99.99 percent of our genes were formed before the development of agriculture about 10,000 years ago.

All people were once hunter-gatherers. These people gathered various fruits and vegetables to eat, and they hunted animals for their meat. Due to a more sedentary lifestyle, we now go to the corner grocery store for chips and dip.

If you rely more on processed rather than fresh foods, consider that the vast majority of your genes are ancient in origin. Nearly all of our biochemistry and physiology are fine-tuned to conditions of life that existed before 10,000 years ago.

Take that back to the cave with you.

Can Clorox "Go Green"?

GREEN FUTURES

Clorox eyes more Green in its Future

By Mark Isaac Thyss
Garden of Healing®

Originally Published: January 6, 2008

Clorox, the company promises, is going green.

Clorox Company, the consumer products giant best known for making bleach, has purchased Burt’s Bees, and plans to turn it into a mainstream American brand sold in big-box stores like Wal-Mart.

As big companies see bigger opportunities in the market for green products, transactions like this $913 million purchase make sense, for Clorox.

From 2000 to 2007, Burt’s Bees’ annual revenue soared to $164 million from $23 million.

Analysts say there is far more growth to be had as consumers keep gravitating toward products that promise organic and environmental benefits.

In the last couple of years, L’Oréal paid $1.4 billion for the Body Shop and Colgate-Palmolive bought 84 percent of Tom’s of Maine, which makes natural toothpaste and deodorant.

But as companies rush to put out more and more “natural,” “organic” or “green” products, consumers and advocacy groups are increasingly questioning the meaning of these labels.

Clorox agreed to buy Burt’s Bees in November of 2007 leaving scores of customers calling Burt’s Bees and accusing the company of selling out.

John Replogle, the chief executive of Burt’s Bees, says “Don’t judge Clorox as much by where they’ve been, as much as where they intend to go.”

Burt’s Bees, a niche company famous for beeswax lip balm, lotions, soaps and shampoos, as well as for its homespun packaging and feel-good, eco-friendly marketing, was founded by Burt Shavitz whose image is still used to peddle the products.

Will Burt’s Bees have a hand in turning Clorox green?

The company’s 380 employees have an opportunity to influence the direction of Clorox, a company that generated $4.8 billion in sales last year and employs 7,800 people.

As a sign of the times, Clorox says it is reshaping its product mix so that more of its products will be eco-friendly by its 100th anniversary in 2013.

Vegetable Harvest by Patricia Wells

COOKBOOK REVIEWS

Vegetable Harvest by Patricia Wells, Vegetables at the Center of the Plate

By Mark Isaac Thyss
Garden of Healing®

William Morrow Cookbooks-Harper Collins (2007)
352 pages Hardcover Color Photographs $43.95

ISBN-10: 0060752440
ISBN-13: 9780060752446

Abandon the old boil-and-saute routine and find out what a master of vegetables can teach you in her new book, “Vegetable Harvest” by Patricia Wells.

Wells, the author of several cookbooks including “The Provence Cookbook”, puts vegetables center stage in this appetizing and innovative collection.

From arugula to zucchini, Patricia offers up a wealth of dishes that incorporate vegetables, herbs, nuts, legumes, and fruits fresh from the garden. And her recipes aren’t limited to summer’s bounty—there are plenty for fall squash and winter potatoes, too.

Patricia Wells lives in Provence and she has written a cookbook based on the produce of her garden. This book is not vegetarian, but the focus is entirely on vegetables.

Well known in food circles, Wells is the restaurant critic for the French weekly, L’Express, and is the food critic for The International Herald Tribune, a post she’s held for more than 25 years.

Vegetable Harvest is her tenth book and follows her passion for French cooking. She lives in Paris and runs a cooking school from her hilltop farmhouse in Provence.

One of the many things you will love about her cookbook is that it covers more than luscious summer vegetables. She also has included many recipes for the less flashy winter vegetables such as beets, Brussels sprouts and cabbage.

Written in a straightforward manner, the recipes are without a lot of fussy preparations and using easy-to-find ingredients. Reading through the recipes you can see that they are manageable even for the novice cook. Wells divides Vegetable Harvest into 12 sections, covering everything from starters to desserts and the pantry.

After surveying the bounty of her backyard garden, Wells became inspired to build meals around vegetables rather than starting with meat, fish or poultry. She tripled the number she served at each meal and tried different cooking methods, looking for the best-tasting, most wholesome ways of cooking each type. She includes nutritional information and an equipment list for each recipe too.

Also included are occasional wine suggestions, menu plans, French sayings involving food, and little bits of history about vegetables.

The potager, or French vegetable garden, represents the very best of French cuisine: fresh, flavorful, and easily accessible for home cooks everywhere. In Vegetable Harvest, Patricia Wells presents this latest collection of recipes inspired by the very garden she tends. Open to any page and find something well worth trying out.

Organic Parenthood

ONE SIMPLE IDEA

Organic Parenthood; Get as chemical free as possible.

By Mark Isaac Thyss
Garden of Healing®

Are you a parent wanting to raise your children in a safer environment?

Here’s our one simple idea to lead you to that goal:

Get as chemical free as possible

There are so many new products coming onto the market, and mainstream retailers and grocers now stock them.

Retailers know people are more conscious of what they put in their bodies, and are very concerned about what foods go into their children’s’ diets.

This is furthering the demand for organics, and in general, a diet full of wholesome and natural foods.

We live in a chemical world and it’s every parent’s job to minimize harmful exposure to their children.

One simple idea: get as chemical free as possible.

Choose certified organic foods when possible: educate yourself about fruits and vegetables that tend to have the highest pesticide residues.

Some non-organic fruits and vegetables have higher pesticide residues than others.

To help you, here’s our list of 12 foods with the highest pesticide residue:

Apples
Celery
Cherries
Grapes grown outside the United States
Lettuce
Nectarines
Peaches
Pears
Potatoes
Spinach
Strawberries
Sweet bell peppers

When it comes to the above list, choose organic.

A new bundle of joy at home brings with it a flood of fresh concerns about your baby’s health.

These concerns are driving parents to the world of organics, free of contaminants and chemical toxins.

Your baby’s fragile new life deserves foods and products as natural and as clean as they can be.

Lo Ha Guo adds Sweetness

NATURE MAKES GOOD

Asian Cuisine reinvents Gazpacho

By Mark Isaac Thyss
Garden of Healing®

No, you don’t have to travel to Singapore to get gazpacho made with Buddha’s fruit. Just push Stevia aside for a moment and get to know Luo Han Kuo.

We’re not asking you to abandon your Xylitol, but it would be wise to stay clear of Aspartame.

And indeed, visit Singapore if you need heart and brain surgery, a health screening and cancer treatment. Why? Singapore is a key destination when it comes to world-class health-care services, and if you want to partake in what is called ‘medical tourism’, go there.

No, this is not a story about travel or off-shore surgery, but something far sweeter, Lohanguo Siraitia Fruit.

What do Aspartame, sugar, Stevia leaf, Xylitol and Lohanguo have in common?

You have a craving for them.

Where they diverge is the part of this story you really need to know.

Firstly, do steer clear of Aspartame. If you don’t know why; find out. And, do check out Lo Han Kuo.

The good news is you have choices, and the possibilities are growing in number. Let’s talk about Lohanguo fruit.

As previously mentioned, you can find it in exotic places like Singapore at the Red White & Pure Restaurant in Vivo City. They make their gazpacho soup with Lohanguo. But, you can also now keep it on your kitchen counter and use it to sweeten teas, and a variety of other foods and beverages too.

Luo han guo is a very sweet fruit found in Southern China. It is low-calorie and extracts of it are now being marketed as a sweetener.

The fruit extract is nearly 300 times sweeter than sugar and has been used as a natural sweetener in China for nearly a millennium due to its flavor and lack of food energy. It has also been used in traditional Chinese medicine.

Lo Han Kuo is a vine cultivated in special gardens cleared in the mountain forests. The plant is rarely found in the wild and has been cultivated for hundreds of years.

It is grown primarily in the southwestern Chinese province of Guangxi, as well as in Guangdong, Guizhou, Hunan, and Jiangxi.

These mountainous regions give the plants the correct amount of shade and often are surrounded by mists; thusly protecting the plants from the ravages of the sun.

The plant is most prized for its sweet fruits, which are used for medicinal purposes, and as a sweetener. Luohan guo fruits are generally sold in dried form and powder, and traditionally used in herbal tea or soup. They are used for respiratory ailments and reputed to aid longevity, hence the name ‘longevity fruit’.

Lohanguo Siraitia Fruit is round and smooth. It has a yellow-brownish or green-brownish color, and is covered by fine hairs. All components, seeds, pulp, and juice of the fruit are intensely sweet, and their nature is cool and non-toxic. The fruit can act as a remedy for sun stroke, wet the lungs, remove phlegm, stop cough and aid defecation.

Please note: there are a number of spellings that apply to the fruit, all used above; namely, Lo Han Kuo, Luohanguo, Lohanguo Siraitia Fruit, Luohan guo, etc.

Lo Han Kuo can be found in powered form and we highly recommend trying it out in your favorite beverages.

If international restaurants (featuring healthy food combining the best of Spa Cuisine and Traditional Chinese Medicine) are using it, then it’s worth a shot - or a smidgen.

Remember, it’s really really sweet, and unlike Aspartame, really good for you too.

Those Five Servings of Fruits and Vegetables

ONE SIMPLE IDEA

Those Five Servings of Fruits and Vegetables

By Mark Isaac Thyss
Garden of Healing®

Nutritional experts recommend that you eat a minimum of five servings of fruits and vegetables every day. How many times have you hear or read this? In your lifetime, countless times!

Here’s what to do to take action.

Use your fist.

Let’s face it, most nutritional information is boring and it’s hard to remember all those details.

Here’s a way to make things easy - one simple idea is all you need.

Be like Einstein.

It has been said that Albert Einstein did not bother to remember anthing he could not find in a book or elsewhere. Apparently, mundane detail was not his thing. Similarly, in this instance, use the image of your fist to remember this important broad nutritional recommendation we all hear, but might not be ready or willing to carry out.

Wait, that’s two simple ideas; it’s getting complicated already: be like Einstein and use your fist.

Which one is it?

Try to remember these guidelines (this is where things get complicated):

Consider eating five servings of fruits and vegetables a day.

What is a serving?

A half cup of cooked or one cup of raw vegetables.
A medium sized piece of fruit, like an apple or an orange.
A half cup of canned or frozen fruit.
A quarter cup of dried fruit, like raisins.
A three quarter cup of juice, or six ounces.
Add fruits and vegetables to every meal.
Eat a cantaloupe for breakfast.

Don’t forget to eat one veggie for lunch and two for dinner. If you can’t take your vegetables plain, consume them as soups.

If you have a can of soup, toss in one half cup of peas.

Add vegetables to your spaghetti sauce.

Sorry, that slice of blueberry pie does not count…

Enough! Here’s our ONE SIMPLE IDEA.

Use your fist and eat five times that of any fruit or vegetable a day. Half cup, one cup, three quarters cup, frozen, cooked or canned - forget it.

If you strive to eat five fist-fuls of anything colorful or green everyday, you’ll be doing better than the 70% of Americans who survive on coffee, pastries, processed foods and TV dinners.

Use your fist and eat five times that amount of fuits and vegetables per day and you’ll be just fine. This is your one simple idea; Einstein would certainly approve.

The Ancient World of Modern Medicine

Medicine is rediscovering it's roots...

Addressing healing on all levels - mind, body and spirit, is far from new.

Remember the Ancient Egyptians and Greeks?

Akin to the Chinese concept of Tao, living a life of Ma'at, was the greatest prescription for maintaining a healthy life in Ancient Egyptian times.

So, what has changed?

Amid the bustle of our modern world...,

there still can be found a level of purification that produces a foundation of health, a new starting point for reaching out.

Magic and Practicality

Healing is both part magic and part practical means that are completely integrated...

What is true today are the core foundations of health, as alive as they were in ancient times.

Simple clean living

No need for spells or incantations written on small papyri and worn about the neck...

No supernatural adversaries needing your letter imploring them to cease their curses on your life.

Time-Release Vitamins & Supplements

Garden of Healing® Supplement Advisor: Time-Release Vitamins

QUESTION:

Dear Garden of Healing® Supplement Advisor:

What are time-release vitamins and how do they work? Are they better than regular vitamins?

ANSWER:

There's really no evidence to suggest that time-release vitamins are better than your usual multi-vitamin, multi-mineral.

Of course, getting nutrients from food is always the best way to stay healthy. Some professionals believe that if you're eating a balanced diet that includes whole grains, fresh fruits and veggies, and healthy sources of proteins, there's no reason to take vitamins at all.

If you take sufficient vitamins and minerals "time release" is not necessary.

Think of it this way; just do multiple dosing throughout the day yourself. This will save you money as time-released supplements are generally more expensive.

Some people "pulse" vitamin C throughout the week; do the same with your multi during the day.

Time-release is mostly a gimmick. Manufacturers want to differentiate their products from competitors by inferring special features that will make you more likely to purchase.

In the case of vitamins E and C; these may be more potent in their natural forms, but the difference is not significant. Some supplements, like folic acid, are actually better absorbed in their synthetic form.
